Our Extra Virgin Olive Oil is of the Picual variety, which is characterized by a fruity and intense aroma of green olives, olive branches and leaves. Notes of tomato and artichoke. Smooth taste with a slight bitterness and balanced spiciness. Aftertaste of dried fruit. Very stable against oxidation. Harvested early, with the first green olives in October, it is pressed and bottled at the Almazara de Bujalance in Córdoba, where our roots are. It is a very balanced oil in flavors and aromas that make it a "premium" quality oil.

This family product is a tribute to the women, men, boys and girls of Spain who have been producing olive oil for generations. We are proud to share this heritage with our growing community.


THE STORY OF LA NIÑA DEL OLIVAR
At our Olive Oil Store, excellence is our priority. We work with well-trained personnel, with a deep knowledge of the olive trees, the soil and the olives, who guarantee that the fruit reaches the mill yard without defects.
Since 2013, three agricultural engineers from the De Ansorena family have been perfecting the 'El Jaro' and 'La Cañada de la Rosa' estates in the countryside of Córdoba and Bujalance. Our mission has been to discover cultivation techniques that provide a unique flavour and aroma, evoking times gone by. The portrait of the Andalusian girl on our label, created by Maximino Peña in 1890, is a tribute to those times.

The painting is signed on the girl's shoulder and the sketch (missing) was possibly made during a stay of the artist in Córdoba where he had family.
This work is set in a very modest rural interior in Cordoba, where the girl is shown with humble clothing and a single "jewel", the earring. Her green eyes stand out with a deep, focused and serene gaze.
Allusions to family scenes are very common in Peña's work. Another example of Maximino Peña's costumbrista paintings, such as The Letter from the Absent Son, can be admired at the Museo Nacional del Prado in Madrid. TWO FARMS, ONE LAND
El Jaro Estate,
Located in the heart of the countryside, in the Municipal District of Córdoba. Soils composed of clays and marls from the Pliocene that form undulations softened after the retreat of the sea in the ancient Gulf of Baetic 5 million years ago. The olive groves here develop with full vigor and are gaining ground on traditional herbaceous crops.
In Jaro the olive trees are still young, and are now giving their best production and quality.
The Cañada de la Rosa Estate,
Located in the Municipal District of Bujalance, the gentle hills of the Campiña are replaced in Bujalance by more rugged hills where olive trees have been found for centuries.
Being able to grow our own olive trees helps us to ensure that the quality is maintained at the source. The soils of both farms are very fertile and deep, and must be well maintained with their flora and fauna. Popularly known as "bujeos" (from bujero or hole) and technically called dry land vertisols and cambisols, they have a very high water retention capacity due to their clay molecules. They are soils with a high potassium content that allows for the perfect natural regulation of the stomata of the olive tree leaves, making the plant very tolerant to drought.
We recently adopted vegetation cover in order to control soil erosion and contribute to improving the organic matter content.
